Hello everyone and welcome to April! Spring is now well upon us, hopefully to stay, and I for one am extremely excited. Warmer weather means so many exciting things and being able to get fresh air without wrapping up in layers is a great feeling.

April specifically is a very special month, and that is because April is National Grilled Cheese Month. Grilled cheese is one of my favorite foods because there are so many ways that you can add to it and make your own creation.

At Cornell University, the college I am currently attending, there is a place that serves a grilled cheese with ham, bacon, and turkey, which is not the healthiest choice, but it is delicious. This month, I encourage you all to come up with your own crazy creations to help celebrate all month long.

Another great thing about the warmer April weather is that farmers are able to get out into the fields and start planting. There was some field work being done throughout March, but now we are approaching the optimum times to start planting. I just wanted to remind you all to be patient as you are driving if you happen to be behind a tractor. Farmers do their best to allow space for you all to get around their large machines, but please be understanding that they have a job to do that is helping to feed you all.

Please just be kind to all of the hardworking men and women as they go out to the fields to start planting this spring and give them a smile or a wave as you pass by as I am sure they would appreciate it. The last thing about April that makes me so excited is the weather warming up. I encourage you all to head outside and enjoy every nice day that there is after being cooped up all winter long. Just remember that if you go for a jog or are doing some intense outdoor activities it is always a great idea to refuel with chocolate milk to help rebuild muscle and restore energy.

I hope that everyone is as excited for this month as I am, and I hope that you are all staying healthy. Best of luck with your grilled cheese creations, and a very happy Easter for those who will be celebrating it. The recipe that I included this time is for Apple Bacon Grilled Cheese, which may sound really odd, but I promise you that it is worth the try. (P.S. Recipe makes four sandwiches).

Apple Bacon Grilled Cheese

Ingredients

8 slices of sourdough bread

4 tbsp. grainy Dijon mustard

12 slices of cheddar

1 Granny Smith apple, thinly sliced

1 Pink Lady apple, thinly sliced

12 slices bacon, cooked

3 tbsp. mayonnaise

Directions:

  1. On one slice of bread, spread 1 tablespoon mustard, then place three slices cheddar, 4 to 5 apple slices, and three pieces cooked bacon. Top with another piece of bread. Repeat to make three more sandwiches.
  2. Spread outsides of each sandwich with a thin layer of mayo.
  3. Heat a large skillet over medium-low heat. Cook sandwiches until golden on both sides and cheese is melty, 3 to 4 minutes per side.
  4. Serve while hot.
